Busy Day Soup (a.k.a Easiest Crockpot Potato Soup Ever)

Have ya'll had a crazy busy week?  

Seems that every day is filled to the brim.  And when I get busy, I avoid the computer.  Yep, I've only turned mine on once since the weekend.  It's been lovely.  You should try it! ;)

But I figure if I'm too busy to write then you're probably too busy to read.  Yes?  

In the midst of the busy, I thought I'd share an easy-peasy recipe to help you out.  When you have parties going on and cookies to bake and presents to wrap, and you're cleaning the house for company, worrying over dinner is the last thing you want to do!

I always make this on a busy day (hence the name) and didn't even get out my big-girl camera.  Oops. Phone pics will have to do!  

Okay, here's how to make this fab soup....first peel some potatoes and chunk them in your crockpot whole.  No need to chop them or anything.  This recipe all depends on how many potatoes you use, so there are no exact measurements.  But no worries, you can handle this!

 Next, pour some chicken broth in the pot.  I usually make mine with "Better than Bouillon."  You can find it in the soup aisle at the grocery store. (No MSG, and real ingredients, yay!)  For this 7 quart crock pot full of potatoes, I think I used about 2.5-3 cups of broth.  You just want to fill it full enough to barely cover the bottom layer of potatoes, as in you still want to see some of the potato.  Then sprinkle some garlic powder, onion powder, salt and pepper onto your potatoes.  Turn your crockpot on to high and go about your merry way!
Four to six hours later, these potatoes should be done!  Remove the top layer of potatoes and set aside.  
 This isn't pictured, but take 1/2 a block of cream cheese, chop it up and add it to the potatoes left in the pot.  Using a potato masher, blend it all together, just like if you were making mashed potatoes.  
 After the potatoes are all mashed and creamy, add milk until you get your soup the right consistency.  Some like it thick, some like it thin....just do it until it looks right to you!  Also, adjust your seasonings if it needs it.  

Now, remember those whole potatoes you set aside?  Chop them up into bite-sized pieces.  Then, add them to the rest of the soup.  If you like completely creamy potato soup, just leave them all in the crockpot and skip this step, but we like ours only partially creamy, as in "creamy with chunks" so that's why I do it this way.  ;)  

Mmm...now for the best part....get some cheddar cheese and generously sprinkle it on top of your soup.  Then add some bacon!  You can just cook and crumble bacon or use the "real bacon pieces" from a package.  I cheated and used the package. =D   It's SO good either way.  
So there you have it...easy peasy Crockpot Potato Soup for a busy day!  Serve it up with a simple salad and you've got yourself a hearty and delicious meal!
