Strawberry Pretzel Pie

The other day I was talking with a friend about what to do with a bunch of strawberries and she mentioned, "The Strawberry Pretzel Stuff."  At first I had to think about it and then I remembered it.  How could I forget this stuff?!  This was my FAVORITE thing to eat when I was pregnant with Caleb.  In fact, we had gone strawberry picking just a few days before he was born and I had made two of these.  And then my water broke prematurely and the rest is history!  And I never did get to eat that other pie because I was in the hospital for a week. (WAAAAHHH!)

Anyways, since the birth of my tiny 28 week, 1lb. 15oz.baby boy,who will be turning seven on Friday (7!!!), I have not had this pie once. Craziness! It is seriously one of my favorite desserts and I can't believe it's been forgotten for so long!

There's lots of different names for this "stuff."  I've heard it called, "Strawberry Pretzel Salad" (weird), or "Strawberry Pretzel Dessert",or even "Strawberry Pretzel Squares."  I just call it "Strawberry Pretzel Pie."  However I do cut it in squares since I make it in a 13x9" pan.  There's just no point in making little bit of this stuff...it's addictive and you'll want to eat it all.  And no, I didn't eat it all...just almost ate it all. (Sshhhh.....that's our little secret, okay?) =D

Strawberry Pretzel Pie

Ingredients:
2 cups crushed pretzels
1/2 cup sugar
1/2 cup melted butter
12 oz. softened cream cheese
2 tbsp. milk
1 cup Cool Whip
2 cups boiling water
2 (3oz.) packages strawberry jello
1.5 cups cold water
4 cups sliced fresh strawberries

Directions:
1.  Mix pretzel crumbs, 1/4 cup sugar and butter.  Press into the bottom of a 13x9" pan.  Bake for 10 minutes and let cool.
2.  Beat cream cheese, remaining sugar and milk until well blended.  Fold in cool whip and spread over cooled crust.  Refrigerate.
3.  Add boiling water to jello mix and stir until dissolved. Stir in cold water.  Refrigerate 1.5 to 2 hours, or until thickened.
4.  Stir the strawberries into the jello and then spoon over cream cheese layer.  Refrigerate for at least 3 hours or until firm.
5.  Serve and watch it disappear!

This stuff is so refreshing and delicious...I want to make another batch right now!! =D
