Whatcha Got Cookin'?

Ever heard that old song that goes, "Hey good-lookin', whatcha' got cookin'?"  I've never actually heard it, but my hubby sings that line to me all the time when I'm busy in the kitchen! =)

I'm always curious about what other people are eating for dinner, so I thought I'd share (for once!) what we're eating this week!  My kids are BIG eaters, and seem to always be hungry.   They love fresh fruits and veggies though so I can't complain, but boy can they eat them up! For example, just in the last week we went through 3 pounds of carrots, two cucumbers, a thing of celery (don't know what to call it..a "bunch?"), 2 avacados, 3 bunches of bananas, 4lb. oranges, 4lb. strawberries, 2 pineapples, 2 mangos...etc. I'm not sure what we are going to do when they become teenagers!!

Sometimes I call my kids "vultures" because as soon as they start hearing any noise from the kitchen they start circling, lol! =D  You would think I never fed them! (Any of your kids do that?)

So here's what's cookin' this week:

Monday--Frijoles Charros (crockpot), veggies to dip (carrots, celery, etc.)
Tuesday--Spaghetti, broccoli
Wednesday--Crockpot Chicken Lime Tacos, Puerto Rican Black beans w/ brown rice 
Thursday--Leftovers
Friday--Homemade Pizza, salad
Saturday--Beef and Barley Vegetable Soup (crockpot), bread
Sunday--Bowties with Sausage and Tomato Cream Sauce, Cranberry-Feta Chopped Salad, Garlic Bread 

In case you're wondering, Frijoles Charros is basically Mexican Pinto Beans.  There's lots of different recipes for it, but mine is pretty basic.  I make it with ham (easter leftovers!), chicken broth, tomatoes, onions, garlic, cilantro, chipotle peppers, spices and of course, beans.  I always use dried beans as well, they taste SO much better!  Oh yeah, and Puerto Rican Black Beans are amazing!  My family lived in Puerto Rico when I was a little girl and my mom learned to make these and passed the recipe on to me.  SO yummy!

I'm definitely going to make another batch of granola bars for snacks this week.  My little people LOVE having snack time.  Usually it's just granola bars, air-popped popcorn, pretzels or fruits and veggies.  I just try to keep it simple and healthy!

    Chili with cornbread
    Breakfast for dinner:)Sausage biscuits, gravy, scrambled eggs
    Cheesy chicken with yellow rice and steamed broccoli
    Leftovers from the weekend - pork loin, fresh cream corn and loaded mashed potatoes
    Grilled pork chops, ranch noodles and green peas

    And I can't remember the other 2 meals, but they are on the list:)

  4. When you have time.... :-) Would you post the recipes for Frijoles Charros and Puerto Rican Black Beans? My hubby loves charro beans (like they serve at Abuelos), but I've never found a good recipe for them...

  5. I have no idea what we are eating this week... can I just be honest? I am so uninspired lately with meals I think cause I have so many other things going/projects I am trying to accomplish. And I am horrible at planning a menu. So I have been winging it - we had Renee's tilapia the other night, BLT sandwiches one night, and I really need to cook some chicken in the crockpot today so we can eat something different. I am in the mood for some good food and hubby finally has his raving appetite back so I think he is too.
