Simple Granola


Granola....mmmm....I love granola! It's delicious on yogurt, made into granola bars or even as cereal.  Most definitely one of my favorite things to eat!  Unfortunately, granola in the store is overpriced and full of corn syrup or other ingredients.  For example, a few weeks ago a friend of mine went to the store in search of plain granola and it took quite a bit of searching...even the employees didn't know where to find it!

Over the years I've tried so many recipes for granola that I've lost track..pumpkin, peanut butter, coconut, almond butter, chocolate, etc.  There's a lot of great ones out there, but honestly, I really don't like all of that stuff in my granola.  I'm a "Simple, Plain-Jane Granola" type of gal.  

I found this recipe somewhere about 5 years ago and have loved it ever since!  It's so easy to make. Want to know the best part?  You don't have to babysit it and stir it a bazillion times to keep it from burning...just leave it in the oven overnight!  (Just one more reason why it's my favorite!)  Simple, sweet and crunchy....granola perfection.

Simple Granola
1/2 cup brown sugar
1/2 cup honey
1/2 cup oil (I use canola)
1 tsp. cinnamon
2 tsp. vanilla extract
7 cups Old-fashioned rolled oats

1) Measure oats out into a large bowl.  Set aside.
2) Mix sugar, oil and  honey in a pan.  Bring to a low boil.
3) Remove from heat. Stir in cinnamon and vanilla.
4) Pour honey mixture over oats.  Stir until well coated.
5) Spread oats onto two lightly greased cookie sheets or 13x9" pans.
6) Bake @ 375 for 10 minutes.
7) Remove from oven and stir.
8) Turn oven off and return pans to oven. 
9) Go to bed and wake up in the morning to an amazing smelling home! =)
10) Store in an airtight container.

Enjoy eating it plain or dress it up with your favorite nuts, seeds or dried fruit!

  7. You smart people with all your cooking tricks! That is kind of crazy and cool to leave it in the overnight. I do love how easy this sounds. I would have to make this and then CASUALLY mention to everyone I knew that I had made homemade granola, cuz I would be so proud of myself, ha! :)
