So here's the story....a few weeks ago, my friend Amy told me about this recipe called "3-2-1 Cake" --3tbsp. cake mix, 2tbsp. water, and 1 minute in the microwave. It sounded easy and yummy, so we gave it a try! While we were impressed that it actually worked and it tasted good, there's was one problem.....by the time we were almost to the middle of the cake, it was really, really dry. As in we kept having to go back and add cool whip to our cups it was so dry!
I really wanted to love this recipe and decided to experiment. With a little tweaking, I believe we've stumbled upon the perfect combination. Here's what you'll need:
1 box Angel Food Cake mix
1 box cake mix
2 boxes instant pudding
There's so many combinations you could pick....as you can see I chose triple chocolate fudge cake mix (chocolate chips in the mix!!) and chocolate pudding. Mmmm....I love chocolate! Really, what other flavor of cake is there?? =)
Have your eight-year-old who is playing dress up in her grandma's 60's prom dress mix it up for you. She'll think it's grand.
I don't have a picture of this part, but measure 3tbsp. of the mix into your cup and add 2-3tbsp. of liquid and stir it up really well. You'll have to experiment to see how "moist" you like it...I prefer about 3tbsp. of liquid. Two is moist cakey, while three reminds me of super moist lava/pudding cake. (Does that make any sense?) I've tried water, milk and coffee to make this. Coffee is definitely my favorite! Then stick it in the microwave for one minute, and voila, you have cake!
The addition of the pudding made a BIG difference. The cake is more dense and moist all the way through. Perfect!
I made these in little ball jars the other night for our family. Our kids loved mixing up their very own dessert! Plus, it's so much better than baking up a pan of brownies, or cake, or a batch of cookies. Because guess what happens to the leftovers sitting around? They get eaten. By me. (Not good!) So having this little single serving of dessert really fixes the over-indulgence problem if you know what I mean.
1-minute {cup}cakes
1 box Angel Food Cake mix
1 box cake mix
2 boxes instant pudding mix
2 boxes instant pudding mix
1) Mix cake mixes and pudding together in a bowl until well blended. (store unused mix in an airtight container...it's a lot, so you'll have dessert on stand by for a while!)
2) Add 3tbsp. mix to a cup and 2-3 tbsp. of desired liquid. Mix well.
3) Microwave for 1 minute and let cool.
4) Top with whipped cream, ice cream, fruit, caramel, chocolate syrup....use your imagination!

I SO need to try this!! Sometimes I just get that something sweet after dinner craving, and a single serving option would be awesome! This looks so good!
ReplyDeleteMMMM...this looks delicious! I have heard before of doing brownies like this but I didn't know what I do with the leftover mixture? I never thought of keeping the brownie mix dry and just finding a combination of wet mixture to add to to just make 2 cup-fulls :)
