I look forward to Monday nights. Monday night means "Date Night."
We rarely actually "go out" for a date, so we have dates at home. We put the kids in bed a little earlier than usual, turn off the phones and spend time together. Sometimes I feed the kids leftovers and then make a fancy meal for us. Sometimes we just play games and chat or watch a movie.
Last night we watched a movie and ate this. I am not sure what to call it. Perhaps "Cheesy Chipotle Mexican Dip???" But it is the dip to beat all dips. It was amazing!!
My basis for this was a classic dip recipe that calls for salsa, cream cheese and sausage. Here's the version I made last night:
Cheesy Chipotle Mexican Dip
1-8oz. package cream cheese
10 oz. of salsa (really not sure on this one...just kind of dumped it in!)
1/2 pound pork sausage
1) Preheat oven to 325 degrees.
2) Heat this mixture in the microwave for about 3-5 minutes. Stir after every minute until the cream cheese is nice and smooth.
3) Put into a greased, 8" baking dish.
Next you will need:
Shredded Mexican blend cheese
1/2 can black olives, sliced
Chipotle sauce (from a can of roasted chipotle peppers in adobo sauce. You can find it in the Mexican section in Walmart)
1) Sprinkle on one handful (or more!) of Mexican cheese.
2) Sprinkle on the olives.
3) Sprinkle on another handful of Mexican cheese.
4) Drizzle with chipotle sauce.
5) Bake for about 20 minutes or until bubbly around the edge. Serve with tortilla chips. Enjoy!!
