Quesadillas = Easy Lunch {34/365}

Lunch time is always our most hectic meal around here.  We are usually just finishing up school and everyone is hungry and tired.  Peanut butter and jelly or leftovers is our usual fare, but about once a week we break out the griddle and have quesadillas.  (This morning it was still out from our blueberry pancakes! Convenient, huh?)

Quesadillas are so simple and it's one of those things that you can mix and match and it still tastes good.  I usually use whatever shredded cheese I have and throw on either veggies or leftover meat or both.  (My favorite combination is monterrey jack cheese and fresh spinach. YUM!)  Today's combo happened to be mozzarella cheese and diced bell peppers. 


Just sprinkle on the cheese, add your extras on one side and let it heat up until the cheese just begins to melt.  Fold it over and cook until the cheese is nice and gooey.

Cut them up, serve with some salsa, and watch them disappear!  Combined with some fresh fruit or veggies, you have a very filling and easy lunch!
