27/365 {Blueberry Baked Oatmeal}



We had this for breakfast this morning and it was so delicious!  I took an old recipe for baked oatmeal, used the idea and came up with this.  It is definitely going to become a regular on the breakfast menu!

 Blueberry Baked Oatmeal
4 tbsp. butter, melted
2/3 c. brown sugar
3 eggs
3 cups old fashioned rolled oats
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
1 1/2 cups milk
3/4 c. fresh or frozen blueberries

1. Preheat oven to 350 degrees and grease an 8 or 9 inch pan. (I use a glass pie dish)
2. Combine wet ingredients.
3. Combine dry ingredients.
4. Fold in blueberries.
5. Pour into pan and bake for 30-35 minutes. Serve warm. Enjoy!

  3. Mmmmm...looks and sounds fabulous! I have a recipe for baked oatmeal that we love! I've never tried adding fruit to it before baking though!

  4. think this would be a good thing for a Sunday School breakfast? need to try it ourself first maybe. Never had baked oatmeal but I love all things oats so I am sure I would love it :)
