We have found...


....a new breakfast favorite! It is Baked Oatmeal. I discovered the recipe a few months ago but I was hesitant to try it. Steven and I have never really liked oatmeal. We eat it, but it's not our favorite. But to my surprise, Steven LOVES this baked oatmeal. I must admit, it's pretty yummy! It's sort of like the Quaker Oatmeal Breakfast Squares although baked oatmeal tastes better and is much more nutritious. It's easy too because you can mix it up the night before and then just pop it into the oven! The recipe makes a large pan so we just refrigerate the leftovers and eat it for breakfast throughout the week. It's also an easy recipe to half if you are wanting to try it out. I've made it several times now and I noted my changes.

Baked Oatmeal

1 cup oil (I substitute unsweetened applesauce)
1 1/2 cups sugar, white or brown ( I use 3/4 cup)
4 eggs
1 tsp. vanilla
6 cups oats (I use 3 cups instant and 3 cups old fashioned)
4 tsp. baking powder
1 tsp. salt (I use 1/2 tsp.)
1 tsp. cinnamon
2 cups milk

*raisins, apples, or other fruit is optional ( I have been adding raisins and the stewed apples I canned last fall--YUMMY!)

1. Combine all of the ingredients in the order listed.

2. Pour into a greased 13x9 inch pan.

3. Bake @ 375 degrees for 30-40 minutes or until lightly browned.

4. Enjoy!!

  1. Sounds yummy! My boys eat oatmeal for breakfast EVERY morning (they LOVE it), so I'm sure they would enjoy a little variation to an old favorite. :) I'm also glad that you added your changes in there so that I didn't have to try to do it 5 times before it tasted right. :) Thanks for sharing.
